Chicken tikka masala with steamed rice

Chicken Tikka Masala

Chicken Tikka Masala is a very rich, creamy gravy that is smooth and subtle in its taste. It’s not an Indian dish at all. It is inspired by Indian curries but it is essentially British. And that is why it is so mellow in its taste. However, being mellow doesn’t mean it’s not entirely delicious!

And there’s always the fact that you can increase the amount of spice and heat to make it taste a bit more like an actual Indian curry. There are two sets of ingredients for this particular Chicken Tikka Masala recipe. You will get the best results if you marinate the chicken overnight. You can, however, marinate it for on hour if you are in a hurry.

The very rich gravy is best enjoyed when poured over steaming rice or dipped into with some fluffy naan. Although it does require a lot of ingredients, the recipe itself is pretty simple. Make it when you want a nice, cozy dinner with your loved ones.

For Marinade:

  • 500g Boneless chicken breasts or thighs
  • ¾ cup Yoghurt
  • 2 tablespoons Garlic minced
  • 1 tablespoon Ginger grated
  • 1 teaspoon Garam masala
  • ½ teaspoon Turmeric powder
  • ½ teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Kashmiri red Chili powder
  • 1 teaspoon Salt

For Sauce:

  • 1 large Red onion finely sliced
  • 5-6 Garlic cloves minced
  • 1 tablespoon or 1-inch Ginger grated
  • ½ teaspoon Garam masala
  • ½ teaspoon Cumin powder
  • ½ teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Kashmiri red chili powder
  • 1 cup Heavy cream
  • 300g Tomato puree
  • 1 teaspoon Sugar
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Butter
  • Fresh coriander leaves for garnish
  • Juice of 1 lemon
  • Salt to taste

  1. Put all the ingredients for the marinade together in a bowl with the chicken. Let it marinate for at least an hour. But the best results for a delicious Chicken tikka masala are when it has been marinated overnight.
  2. Heat the oil in a large pan. Shake off the marinade from the chicken pieces and add them in small batches to the pan. Fry for 3-4 minutes on each side. Keep the chicken in a separate bowl while you finish cooking your sauce.
  3. Add butter to the pan. Fry the onions until they are golden brown.
  4. Add the garlic and ginger for about 1 minute.
  5. Add the garam masala, cumin powder, turmeric, Kashmiri red chili, and coriander powder. Fry for 3-4 minutes.
  6. Pour in the tomato puree and let it simmer. Add salt according to your taste.
  7. Stir in the cream and sugar. Add the chicken and the leftover marinade. Add about half a cup of water and let the chicken tikka masala simmer.
  8. The chicken will take 10-15 minutes to cook completely. Adjust the seasoning.
  9. Add the coriander leaves and the lemon juice just before you take the pan off the heat.

Pour the decadent and luscious gravy over rice or eat it with fresh roti. Either way it tastes amazing. Don’t forget to add the lemon juice because the citric acid cuts away the heaviness of the cream. Make this chicken tikka masala and do tell me how it went. Send me a picture on Instagram!
